For demanding tasks, like video editing, I'd remote into the PC. When in other rooms or on the road, I would use a cheaper laptop with a good display and an external portable display for additional real estate, using it for light tasks. Instead, I would like to have one powerful desktop PC with a powerful GPU, which I can do heavy lifting tasks like video editing and other things on. If one of your users almost always connects from within the local network, then they should have their own workstation that can do this, otherwise you are overcomplicating things.
